    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Ham And Broccoli Quiche
    Categories: Pastry, Cheese, Dairy, Vegetables, Pork
    Yield: 8 servings

    1 Unbaked deep-dish pie crust
    - (9")
    1 c Shredded Ementhal (Swiss)
    - cheese
    1 c Shredded mozzarella cheese
    2 tb A-P flour
    4 lg Eggs; lightly beaten
    1 1/2 c Whole milk
    2 tb Chopped green onion
    1/4 ts Salt
    1/8 ts Pepper
    1/8 ts Dried thyme
    1/8 ts Dried rosemary; crushed
    1/2 c Diced, fully cooked ham
    1/2 c Chopped fresh broccoli

    Line unpricked dough with a double thickness of
    heavy-duty foil. Bake at 450o for 8 minutes. Remove
    foil; bake 5 minutes longer. Cool on a wire rack while
    preparing filling.

    Toss cheeses with flour; set aside. In a large bowl,
    combine the eggs, milk, onion and seasonings. Stir in
    the ham, broccoli and the cheese mixture. Pour into
    prepared crust.

    Bake @ 350oF/175oC for 55-60 minutes or until set. Let
    stand 10 minutes before cutting.

    Welcome to the Cooking echo. Pull your chair up to the table and join
    in to the fun. What sorts of things do you like in your diet? We have a
    vatiety of culinary lifestyles represented in our membership..

    That quiche is a decent btreakfast. But, if I'm putting that much
    effort into my "eye opener" I prefer something like this:

    Title: Dirty Dave's Hobo Skillet
    Categories: Pork, Potatoes, Vegetables, Eggs
    Yield: 1 Serving

    2 Breakfast sausage patties;
    - cooked
    3 sl Bacon; cooked crisp
    1/2 md Onion; coarse chopped
    1 sm (or medium) bell pepper;
    - any color, cored, chopped
    2 c Shredded or diced hashbrown
    - potatoes
    4 oz Can chopped green chilies;
    - drained, opt
    2 sl Yellow cheese
    2 lg Eggs
    Salt and fresh ground pepper
    - on the side.

    Gather your ingredients and do the prep work, slicing,
    dicing, etc.

    Fry the sausage patties and the bacon to your desired
    "doneness". Set aside to drain on paper towels.

    In the fat left in the skillet saute' the potatoes with
    the oinins and peppers amd chilies (if using) until the
    potatoes are done to your liking. The onions should
    be translucent and the pepper chunks softened.

    Add the potato/vegetable mixture to your serving vessel
    and top with the slices of cheese. Place the sausage and
    bacon on the cheese.

    In the fat remaining in the skillet cook the eggs to
    your liking and slide them onto the meat to top the
    dish, sit down and dig in.

    Serves 1 (or two)

    Title: Carolina Scrapple
    Categories: Meats, Breakfast
    Yield: 1 Recipe

    1 lb Boneless pork
    Water
    1 ts Salt
    1/2 ts Pepper
    1/2 ts Sage
    1/4 ts Garlic powder
    1 1/4 c Yellow cornmeal
    1/2 c Onion; chopped

    Cook meat in water seasoned with salt, pepper, sage, and garlic powder
    until very tenderRemove meat from broth and chop. Measure broth and
    adjust to 6 cups. Stir in cornmeal and cook until thick, about 20
    minutes. DO NOT SCORCH. Stir in chopped meat and onion and check
    seasoning. Pour into loaf pan and chill. Slice and fry in hot fat
    until hot and browned.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Cheddar Pancakes
    Categories: Cheese, Breakfast
    Yield: 6 Servings

    8 oz Cheddar; md, grated
    3/4 c Dairy sour cream
    3 ea Egg yolks, lg, beaten
    2 ts Unbleached flour; plus
    1 ts Unbleached flour
    3/4 ts Salt
    1 1/2 ts Thyme
    1/2 ts Mustard; dry
    2 ts Butter

    Set out a heavy skillet. Put the grated Cheddar Cheese in a bowl and
    add the sour cream and egg yolks, mixing well after each addition.
    Add the flour salt thyme and dry mustard, which have been mixed well
    in a separate bowl or cup. Melt the butter in the skillet over low
    heat and drop the batter by tsp into the skillet. Cook over medium
    heat until lightly browned on the bottom. Loosen the edges with a
    spatula, turn and lightly brown the other side. Serve at once with
    bacon or pork sausage. Makes about 2 dozen 3-inch cakes.
