Title: Hoisin Drenched Garlic Seitan With Baby Bok Choy

Yield: 4 Servings
4 Baby bok choy; trimmed &
- halved lengthwise
1 tb Neutral vegetable oil
3 cl Garlic; minced
8 oz Seitan; thinly sliced
Salt
Black pepper; freshly ground
1/2 c Hoisin sauce; blended with:
1/4 c Water
Lightly steam the bok choy over boiling water until just tender, 3 to
4 minutes. Transfer to a plate and set aside.
Heat the oil in a large skillet over medium heat. Add the garlic and
seitan and cook until the seitan is browned all over, about 5
minutes. Season to taste with salt & pepper. Stir in the hoisin
mixture. Add the bok choy and spoon the sauce over all to coat.
Reduce the heat to low and simmer until tender, about 10 minutes.
Serve hot over rice.
