Title: Three Bean Burritos

15 oz Can vegetarian refried beans
1 c Black beans;
- cooked or canned,
- rinsed & drained
1 c Dark red kidney beans;
-cooked or canned,
- rinsed & drained
1/2 c Fresh Tomato Salsa
1 ts Chili powder
Salt
Black pepper; freshly ground
1/2 c Cheesy Sauce -OR-
1/2 c Vegan cheese; shredded
Red onion;
- minced (optional)
In a large saucepan over medium heat, combine the refried beans, black
beans, and kidney beans. You can also add 1 cup of cooked corn
kernels to give it a deliciously sweet accent. Stir in the salsa,
chili powder, and salt & pepper to taste. Cook, stirring, until the
beans are hot, 7 to 10 minutes. Reduce the heat to low and keep warm.
Place the warmed tortillas on a flat work surface and spread a large
spoonful of the bean mixture across the lower 3rd of each tortilla.
Sprinkle with the cheesy sauce and onion, if using. Fold up the
burrito by bringing the bottom end over the filling, folding in the
sides, and then rolling it up. Serve at once, seam side down.
