    Title: Buckeyes
    Categories: Five, Chocolate, Nuts
    Yield: 66 servings

    5 1/2 c Confectioners' sugar
    1 2/3 c Peanut butter
    1 c Butter, melted
    4 c Semisweet chocolate chips
    1 ts Shortening

    In a large bowl, beat the sugar, peanut butter and
    butter until smooth. Shape into 1-in. balls; refrigerate
    at least 20 minutes.

    Microwave chocolate chips and shortening on high until
    melted; stir until smooth. Insert toothpick into peanut
    butter ball. Holding toothpick, dip peanut butter ball
    three-quarters of the way in chocolate, allowing excess
    to drip off. Place on a waxed paper-lined baking sheet;
    remove toothpick. Repeat with remaining peanut butter
    balls. Refrigerate 15 minutes or until firm. Cover and
    store in the refrigerator.
