    Title: Jojo Potatoes

    The convenience stores all served JoJos where i grew up.
    Often they would just be battered and lightly salted.
    Over time they became more seasoned.

    I had never heardof JoJo's as a food item until that reciper. Here's
    a 'tater recipe that's either the height of or the depths of unique
    foods. I'd try one very carefully before rendering judgement. Bv)=

    Yield: 4 Servings

    Title: Potato Tempura
    Categories: Potatoes, Sauces, Vegetables
    Yield: 3 servings

    3 md Russet potatoes
    1 cl Garlic; more to taste
    1 tb Corn starch
    1 1/2 A-P flour
    1 tb Fried chicken breading mix;
    - (opt)
    1 lg Egg
    1/2 ts (ea) Black pepper & salt
    2 tb Tomato ketchup
    3 tb Vinegar
    2 tb Soy sauce
    1 tb Sugar
    pn Ground red pepper
    1/3 c Water

    Peel and grate potatoes and garlic.

    Add the egg to the potatoes and garlic. Sprinkle with
    pepper and salt. Stir to incorporate.

    Add fried chicken breading mix. Stir continuously.

    Add the cornstarch as you continue to stir.

    Gradually mix in the flour.

    Place in fridge for 30 minutes to 1 hour.

    Scoop teaspoons of mixture. Drop into boiling water
    until droplets float.

    Remove from pan.

    Deep fry the potato tempura until golden brown.

    For the sauce just mix in soy sauce, vinegar, ketchup,
    sugar, salt and pepper and add water. mixing sauce

    Simmer until slightly reduced or until sauce is thick.

    Serve potato tempura with the sauce. Made of potatoes
    but tastes just like his favorite street food shrimp
    tempura. The trick was effective.

    Title: KFC Potato Salad
    Categories: Copycat, Potato sala
    Yield: 8 Servings

    2 lb Russet potatoes
    1 c Mayonnaise
    4 ts Sweet pickle relish
    4 ts Sugar
    2 ts White onion; minced
    2 ts Prepared mustard
    1 ts Vinegar
    1 ts Celery; minced
    1 ts Pimentos; diced
    1/2 ts Carrot; shredded
    1/4 ts Dried parsley
    1/4 ts Pepper
    1 ds Salt

    Here's a simple clone for the potato salad that is purchased as a
    side dish from America's largest fast food chicken chain. Some of the
    skin is left on the potatoes in the real thing, so you don't have to
    peel them too thoroughly. Just be sure to chop your potatoes into
    cubes that are approximately 1/2" thick, and then let the salad
    marinate for at least 4 hours so that the flavors can properly
    develop. If you let the salad chill overnight, it tastes even better.

    Lightly peel the potatoes. You don't have to get all of the skin off.
    Chop potatoes into bite-size pieces and boil in 6 cups of boiling,
    salted water for 7 to 10 minutes. The potato chunks should be tender,
    yet slightly tough in the middle when done. Drain and rinse potatoes
    with cold water.

    In a medium bowl, combine remaining ingredients and whisk until
    smooth.

    Poured drained potatoes into a large bowl. Pour the dressing over the
    potatoes and mix until well combined.

    Cover and chill for at least 4 hours. Overnight is best.

    Title: Crispy Mashed Potato Pancakes (Goyish Latkes)
    Categories: Potatoes, Vegetables, Cheese
    Yield: 2 Servings

    2 c Cold mashed potatoes
    2 lg Eggs; lightly beaten
    1 tb A-P flour
    1/2 ts Garlic granules
    1 tb Oil
    1 tb Chopped fresh chives or
    - scallion greens
    Shredded yellow cheese

    Combine potatoes, eggs, flour, and garlic granules in
    a bowl.

    Heat oil in a skillet over medium-high heat; fry potato
    mixture in skillet, pressing with a spatula to flatten
    evenly. Cover and cook until bottom is crispy, about 10
    minutes; invert onto serving platter. Garnish with the
    chives/greens and the cheese.

    Makes 2 nice breakfast pancakes.
